Shōwa Hospitality, the team behind acclaimed restaurants Hiden and The Taco Stand, is set to transform Miami's dining scene with the grand opening of Bistro 8. Located in Little Havana, Bistro 8 promises a unique blend of Mexican and French culinary artistry under the direction of Chef Pancho Ibáñez, a veteran of the two-Michelin-starred Pujol in Mexico City. Bistro 8 will officially welcome diners starting January 10, 2025.

A Culinary Journey Across Latin America
Bistro 8 will focus exclusively on dinner, offering a menu of shareable dishes that celebrate Latin American ingredients and flavors. Chef Ibáñez masterfully combines Mexican and French culinary techniques, creating dishes like Chuletas de Cordero (lamb chops with chile morita jus) and Pollito en Escabeche (roasted chicken in escabeche). Complementing the food is a curated cocktail selection highlighting agave and grains, designed to deliver bold, clean flavors.

An Intimate Atmosphere
The 1,700-square-foot space will accommodate 40 guests in its main dining area and 10 at the bar, providing a cozy yet sophisticated setting. The ambiance merges Mexican vibrancy with French bistro elegance, thanks to designer Minoru Oyamatsu, known for his work with Michelin-starred establishments. Warm tones and refined details ensure a welcoming environment that enhances the dining experience.

A Commitment to Excellence
Chef Pancho Ibáñez, Shōwa Hospitality’s Director of Culinary Operations, brings over 30 years of experience to Bistro 8. Hailing from Veracruz, Mexico, Ibáñez has an impressive background, including collaborations with prestigious brands like Iberostar and Aeromexico. His philosophy of “simple pero no sencillo” (simple but not easy) underscores the thoughtful execution behind each dish.

Innovative Sound and Design
The restaurant’s sensory experience extends to sound, with a custom-built system by Japan’s Taguchi Craft. Arctic birch wood speakers create a serene auditory ambiance that enriches the dining atmosphere. This attention to detail reflects Shōwa Hospitality’s dedication to crafting a holistic and memorable experience.

A Celebration of Little Havana
Bistro 8 is the third Miami restaurant by Shōwa Hospitality, following Wynwood's Hiden and The Taco Stand. It is strategically located in Little Havana, selected for its vibrant cultural ambiance. This new venture adds to the neighborhood’s rich culinary tapestry, offering an exciting destination for locals and visitors alike.
