COYO Taco is entering a new phase of growth with the launch of its newest Miami location at Bayside Marketplace, officially opening to the public on May 26. The popular Miami-born taqueria and speakeasy concept is using its waterfront opening to debut a refreshed design direction and a more elevated guest experience while continuing its international expansion into markets such as London, Medellín, and Lisbon. Located at 401 Biscayne Blvd., the new 4,473-square-foot restaurant was designed by Saladino Design Studios and blends mid-century influences with sculptural Mexican-inspired interiors. Features include custom mosaic communal seating, neon accents, indoor-outdoor bar areas, and expansive garage doors opening toward Biscayne Bay. The location includes approximately 85 indoor seats and nearly 40 outdoor seats, arranged around a courtyard-style bar.
Sven Vogtland said the Bayside opening represents a major evolution for the brand.
“This location reflects the evolution of COYO Taco through a more elevated design and overall guest experience, while staying true to our authentic flavors and vibrant energy,” Vogtland said.
Scott Linquist is leading the culinary program at the new location, including two Bayside-exclusive dishes: Michoacán Style Carnitas and the Quesadilla Cubana, a Miami-inspired menu item combining pulled pork carnitas, ham, queso mixto, pickles, and mustard.
The restaurant will also feature handcrafted agave cocktails, frozen drinks, and its signature margaritas.
